Зовнішній вигляд – сало без шкіри, великими шматками (обрізки не дозволяються), свіже, необвітрене, чисте, без кров’яних плям та залишків м’яса, без пожовтіння поверхні. Товщина сала – не менше 3 см. Колір – білий. Запах – характерний для доброякісного сала, без стороннього запаху. Консистенція – м’яка, щільна. Термічний стан – сало охолоджене, з температурою в товщині м’якоті від 0˚С до +6˚С. Строк придатності – відповідно до діючих нормативних документів. Пакування – сало запаковане без вакууму в пакети із полімерних плівкових матеріалів, згідно з чинними нормативними документами або інші матеріали, що дозволені у сфері охорони здоров’я для контакту з харчовими продуктами. Кожна одиниця пакування повинна бути закрита будь-яким способом: термозварюванням, липкою стрічкою , гумовими обхватками тощо, та складена в чисту, суху, без стороннього запаху багатообігову транспортну тару.
