La concession a pour objet l'exploitation du service de restauration collective des convives de l'EHESP (personnels, apprenants, extérieurs) : - La restauration principale au sein du restaurant "Brillat-Savarin" - La restauration rapide au sein de la cafétéria "Robert Debré", localisée dans le hall d'accueil principal de l'École - Les prestations annexes livrées ou organisées dans divers endroits au sein du site rennais (par exemple pauses café, plateaux de fruits, plateaux repas, servis au restaurant ou livrés dans l'Établissement, buffets, cocktails apéritifs, déjeunatoires ou dînatoires, etc.). Le service de restauration est concédé au concessionnaire qui en assume l'entière exploitation et la pleine responsabilité à ses risques et périls, y compris en ce qui concerne son équilibre économique et financier.
