Aufgrund neuer Arbeitswelten (hohe Homeofficequoten) sind nicht alle Beschäftigte täglich vor Ort anzutreffen. Diese Angaben stellen eine Orientierungshilfe dar. Monatliche Abnahmemengen aus einer vorherigen Bewirtschaftung liegen nicht vor. Der Vermieter übernimmt keine Gewähr für eine bestimmte Essenteilnehmeranzahl und eine bestimmte Mindestumsatzhöhe. Die Bewirtschaftung der Mensa soll durch einen externen Mie-ter/Betreiber/Bewirtschafter erfolgen. Die Bewirtschaftung erfolgt im eigenen Namen, auf eigene Rechnung und auf eigenes wirtschaftliches Risiko des Betreibers.
