Renovation of Pálffyovský Manor NKP – Kitchen Technology

The subject of the order is the supply, installation, and commissioning of kitchen technology, ancillary facilities, and a separate food distribution area for the catering operation, including ensuring hygiene requirements and integration with the production and sales part of the operation. The subject of the order also includes the assembly and connection of equipment to utility networks, commissioning, demonstration of functionality, and operator training. The technological part of the project addresses the layout and technological equipment of the kitchen, ancillary facilities, and a separate food distribution area for the clients of the social services home's catering operation (hereinafter referred to as "DSS") in conjunction with the production and sales operation, in order to ensure high hygiene requirements for the catering operation of this facility. The sales areas are designed internally to ensure a higher standard of interior furnishings and to create conditions for providing catering services at a standard level. The design was conceptually developed according to the requirement to provide catering for: up to 170 clients, up to 90 clients for takeaway – cook and serve, up to 40 DSS service staff. Furthermore, the layout addresses the ground floor areas, including the preparation process, food distribution, the production area, which is the main kitchen with preparation rooms, tableware washing, and storage areas. The ground floor will also house changing rooms for kitchen staff and toilets with an anteroom.
