Contract for the operation of the Danish Parliament's dining facilities

The agreement covers the total operation of the Danish Parliament's dining facilities, which consist of three canteens and two cafes with a total of 1,400 potential daily users, as well as a restaurant primarily used by guests at Christiansborg. The agreement also includes supply and service for internal meetings and conferences, as well as for banquets and official events. The assortment basically consists of a breakfast, lunch, and dinner assortment, an assortment for meetings and receptions, and menus at a higher gastronomic level for, for example, official events. Upon conclusion of the contract, employees will be transferred in accordance with the Act on Employees' Legal Status in the Event of Business Transfer (Business Transfer Act). The contract includes the option for extension for 2 x 1 year. The contract also includes an option for the sale of kiosk items. To satisfy the many user groups of the Danish Parliament, it is crucial that the Supplier operating the dining facilities has an in-depth understanding of and a serious desire to demonstrate a high degree of flexibility and helpfulness. The Danish Parliament also desires a canteen solution where a professional approach to the task ensures high quality based on fresh and healthy quality ingredients, an exciting and inviting presentation, and optimal hygiene conditions. Furthermore, focus on organic and sustainability is desired. The assortment must be continuously adapted to the Danish Parliament's wishes, as well as the season and current healthy eating trends. A solution is expected that offers a varied assortment that can cater to the very broad clientele at the Danish Parliament. It is estimated that an average of approx. 20-40 purchase breakfast, an average of 200-400 purchase lunch in the dining facilities, and 30-70 purchase dinner. There is considerable variation in the number of daily users throughout the year depending on parliamentary activity. In addition, services are provided extensively for events with guests and for internal meetings. Indicative breakdown of meetings, receptions, official events, etc.: Internal meetings: 8-15 meetings per day with approx. 5-25 participants. Small events and tours: 1-3 per day. 20-60 participants. Receptions: 30-35 per year with approx. 80-150 participants per reception. Conferences: Approx. 250 per year with approx. 30-200 participants per event. Official events: 10-15 times annually with approx. 15-60 participants. Banquets: 2-3 per year with 250-400 guests per occasion. Flag Day: Annually with 1,500-2,500 participants per occasion. Citizenship Day: Annually with approx. 2,000-4,000 participants per occasion. In addition, events such as Culture Night, Christmas events, and election nights are held with a larger number of meals. Typically between 300 and 600 per event. In addition, the Danish Parliament holds smaller events where the supplier may be asked to provide staff catering and food for guests. E.g., Constitution Day event. The requirement is to achieve the organic silver label within the first half year of operation. The Danish Parliament provides kitchens. The main kitchen is located in the parliamentary building on the floor below the Members' dining room and is equipped as a large and fully equipped production kitchen with sufficient equipment for rational production and reasonable storage facilities. Adjacent to the dining facilities on the 2nd floor and in the Provianthuset, there are smaller kitchens that are also approved for production. These kitchens may only be used for the production of hot food to the extent that surrounding offices are not exposed to odor nuisance.
