L’approvisionnement en produits de la mer concerne des produits de pêche, durable, sauvage ou le cas échéant d’élevage et doivent être conformes à la réglementation européenne comme le label public « pêche durable » (www.ecolabel@franceagrimer.fr), et les autres signes de la qualité (label rouge…). Selon les produits, l’écaillage, le filetage et le désarêtage sont demandés. Sur demande expresse, la proposition d’un produit décongelé peut être faite. Le montant estimé annuel de ce lot est de 50 000€uros HT.
